When I'm (using iphone 15pro) texting a friend who's using a fully updated Google Pixel, the text box (where I would type) changes from RCS to SMS and back to RCS after I send a text. It happens with multiple Pixel users who I know keep their phones up to date.
I would think of any Android the Pixel's would be most compatible with RCS and especially Apple's version of it.
Has anyone else seen this?

Apple and Google use two different versions of RCS so it's not at all surprising that there are issues.

The implementation of RCS has not been smooth. Where to lay the blame is not clear. Some fault may lie with Apple, some with the carriers and some with the various Android phones manufactures and messaging client developers.
