My brand new watch has been not holding a charge really well. I have been forced to give up sleep tracking in order to get it fully charged for activities. This morning I woke up to a green lightning bolt that will not go back to any other screen.

Did you try to force restart the watch by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
If this does not work, unpairing the watch would be the next step:
