My Mac purchased in late 2014 is no longer updated beyond Big Sur 11.7.10
I've upgraded to a MacBook M2, but I was wondering if my old, much loved 27" screen can be put to another purpose.

As mentioned, you cannot use the display of the 2014 with your new Mac so. As you have probably discovered it is now obsolete (will not run current versions of Mac OS) and Apple has classed it as Vintage because parts are largely not available.

Target Display Mode went away when your Late 2014 iMac – the first 27" 5K Retina iMac – came out. Your iMac doesn't have it. Your new Mac doesn't even support using any iMac as a Target Display.
There is a workaround product called Luna Display, but an article on the vendor site says that it is not suitable for applications involving high-motion content, such as video editing or gaming.
If you are asking if it can be used as a monitor for your new Mac, no.
Just to add, it's actually considered "Obsolete" by Apple.
