How do I do this in Sequoia? I can do this using Format>Font>Show Fonts and then choosing the symbol at the top, but I seek something more direct.

No, it won't: TextEdit does not have a menu path for Strikethrough. In TextEdit you have to go through Show Fonts (command + T) and click on the strikethrough icon.

You can create a keyboard shortcut in System Settings > Keyboard > Keyboard Shortcuts. I did a test with the following settings and it worked fine in Pages:
