How do I set up single language while writing texts?

to write quickly in either french, german or english, the language chosen used to be very helpful

I used to be able to do this with my old Mac I used to be able to set my old Mac to write in French but keep the English keyboard layout. The language (Lithuanian) is chosen as Primary in the Preferred languages list, unfortunately Lithuanian doesn't appear as an option in the list for languages for applications, although I would like to make Lithuanian the automatic language for Pages. Is there a way to make that happen? These are the only languages given as options for Pages application (although I checked other applications, and Lithuanian isn't given as an option for other applications either):
