The sound changes when zooming in with camera app on iPhone 14 Pro. There used to be a camera setting “Record Stereo Sound” to switch off this behaviour. Unfortunately, I cannot find this setting anymore.

It wasn’t removed, just changed to add Spatial Audio to Mono and Stereo.
iPhone > Settings > Camera > Record Sound
I appreciate your help, but I am disappointed that the "Settings > Camera > Record Stereo Sound" option was removed from iOS. It gave good control. Now the best option probably is not to zoom while making the video and edit afterwards.
Do a test and see what works best. If the default settings aren’t suitable for your needs, consider adding an external microphone for more precise control.
Please follow this path,
iPhone > Settings > Camera > Record Sound > Stereo
