Seems though some things are missing

I have an iPhone, iPad and Mac that all back up to iCloud. Between them there must be 15 or so apps that are included. When I log into iCloud however, the portion of the page that shows apps shows only 8 apps. One of which isn’t being used or backed up at all.

Am I missing something? Shouldn’t the iCloud home page identify all apps that are being backed up?

No. The iCloud website shows Apple apps that sync their data to iCloud. The actual device Backups for iPhone and iPad are not visible in the iCloud website.

It does not show 3rd party apps that are backed up in the iCloud backup or that they themselves store data in iCloud.

Macs are not backed up to iCloud at all. Apple apps like Notes, Calendar, Email, Photos (if iCloud Photos is turned on) will sync data to iCloud from a Mac. This is not a backup, just a synchronization service.
