Will the 32 bit excel 2008 product run on the current iMac operating system?

No. No 32-bit software will; use a newer version of Excel or a product such as LibreOffice or Numbers instead.

You don't need to export your documents. Many of the programs, including both I listed above and the preinstalled TextEdit, can open them as is, but some formatting may be lost.

Could I save a spread sheet from excel as comma separated values and import that into a newer spread sheet program? No macros or formulas just text and numbers.

same question for Word docs, save as plaintext?
