How do I delete albums from the sidebar on iPhoto? when I open up the album and highlight the pictures and try to delete, it just beeps.

If you right-click (or control-click) on the album name, you get this sub-menu:
with Delete Album.
Deleting an album does not remove the pictures from the Library-- it just removes the album-list. If pictures are in other albums, they will remain there.
If you go into an album, select all, and hit delete, then the pictures are removed from the album, but they remain in your Library and they will still be in other albums that they were in.
Selecting pictures and using Command-Delete removes those pictures from the Library. For 30 days (unless you interfere with this safety feature) they can be recovered in the "Recently Deleted" view.
