I currently have the iPhone x, there are no more security updates and i would like to upgrade to an iPhone 13 pro max or iPhone 13 pro but i am unsure how many years they have security updates for. So my question is when does the iPhone 13 pro and pro max stop updating

The iPhone 13 Pro and pro max have been discontinued for over 2 years. No one here can say when Apple will stop providing iOS or security updates for them, though they probably have at least several years left in them.

When did you notice that there were no more security updates?
The iPhone X was discontinued in September 2018, so if you noticed that security updates were no longer available in September 2024 or example......(the last update might have been iOS 16.7.10 in August 2024).....that tells you that Apple provided security updates for about 6 years after the iPhone X was discontinued.
So, if the past predicts the future......(it doesn't necessarily).......that might indicate that updates for the iPhone 13.......discontinued in September 2024......might be available until early 2030.
Conservatively, you could probably expect updates to continue for another 3 years or so.
