We have two new iMacs being used simultaneously on the same workspace, and our magic mice annoyingly interfere with each other. I switched to a USB mouse on one, but the magic mouse on the other still takes over. Can't I exclude the magic mouse in my bluetooth settings?

If both iMacs are using the same Apple ID, check that you're not using Universal Control. (The title of the Support article says "between Mac and iPad", but it also works between Macs.)

You should be able to tell one of the iMacs to forget the Magic Mouse in System Settings > Bluetooth. Click on the i in a circle and choose "Forget This Device" in the window that opens.
Sharing an Apple Account leads to all sorts of issues. Best don’t do that.
