You can just as easily go to the Control Center to adjust the brightness. Just touch the upper right corner of the screen and slide your finger down to open it.
I misunderstood what you were asking. For auto-brightness there isn't a shortcut to turn it on or off. You can create shortcuts to change the brightness to a specified value, but that's it.
The quickest solution is to ask Siri. I don't understand how they can forget or especially remove something so small.
