I have an elderly mother who we are considering an apple watch to use as a falls protection. Can anyone explain how this works and dose the sos go to emergency services or can it go to nominate numbers.

I can tell you that it does work (from personal experience)
It will call emergency services and notify your emergency contacts. You can't specify not to all emergency services. It is a contact all only.
