How do I get satellite to work when I am 20-30 miles offshore fishing in the Gulf of Mexico on a full sunny day. There were 4 iPhone 2-iPhone 16 & 2 iPhone 15 and neither phones would allow satellite to work. There wasn’t even an option for the satellite

It would suggest you are in an area that is not supported. Being out to see, may disable the Satellite option since it needs to detect you are within the US.
It may be thinking you are in Mexico and as such not make it available.
Did you have a WiFi or cellular connection?
If you see SOS, No Service, or Searching on your iPhone or iPad - Apple Support
Show the Home Screen, not Control Center Please.

If you see SOS or "SOS only" in the status bar, your device can still make emergency calls. If you see No Service or Searching in the status bar on your iPhone or iPad (Wi-Fi + Cellular), your device isn't connected to a cellular network.
