Using two monitors with Mac OS and Windows 11

I have an intel MacBook Pro and I use Parallels so I have access to Windows 11 when I need it. Is it possible to have my Mac on Mac OS and my larger desk monitor on Windows or visa/versa?

You should be able to place the Parallels window for Windows in whichever monitor you want.

Can you not drag the Parallels window for it to the display you want it on? Drag the window to the edge of the screen that is near your external monitor and it should move onto the other display if you keep dragging it.

You can also use the Window menu for the Parallels app and click on the "Move to (the display you want it on)".
