Looking for a solution as to why my I phone 16 will not give me the option to print in colour, only B&W on my HP printer, as have no issues from my windows laptop when printing

What are you trying to print? When I set my iPhone to print on my HP printer, under the printer heading there is a switch to turn Print in Color on or off. You can also download the HP Smart printer app for your device and that has some settings you can modify.

It is hard to say. I'm not sure where the settings come from, but I read something earlier today about the HP Smart Printer app, that is why I included it. Here is how my settings appear when trying to print. I would reach out to HP to see what they have to say.
I have tried different documents to print in both my phone and with the HP Smart Printer app, and have attached screen shots of how it appears on my phone prior to printing
