Only a certain number of apps can be added on my Apple Car Play Screen
Why can't I add certain apps to my Apple Car Play Screen? There are only a certain number of appls available on the cusomizable screen.

The developer of the app must support CarPlay. They are the ones that choose if they want to make their app available on your CarPlay screen.. Contact the developer of the app you want to add.
Apple offers extensive resources to developers if they do want to make their apps available in CarPlay. It really is not that difficult for them to implement support. The only real difference is the Developer cannot require users to be looking at their phone or require them to interact with the phone as that defeats the purpose of a Hands-Free operation and the interactions must be made on the CarPlay screen.
