Yes, you can do it by going to Settings>Face ID & Passcode>Allow Access When Locked and Toggle off Control Centre.

That doesn't really matter. All someone needs to do is turn the phone off. And, any thief who knows what they're doing can easily put the phone in a Faraday bag which will block radio signals.

You can remove Airplane Mode from Control Center. Remove the entire combined control then add back the individual controls for WiFi, BT, etc.
