First - always delete them. Never reply to them, never click any "unsubscribe" links or any other links.

Log in to your email's webmail if you can. Most email services have spam filtering and allow the user to tweak it. For example mine has three levels of spam filtering which I can select. Don't set it on its highest level or you'll block stuff you need. Note that server-side filters will take precedence over any local filters. I can also add specific addresses to a block list, although this largely a waste of time because the spammers change and spoof addresses on a regular basis.

The best thing, though, is to ignore it, delete it and not let it get on your nerves because, ultimately, it's impossible to stop it completely. I find spam goes in waves; I get none for a week or so and then a glut of them until the server spam filters learn the new spammers and update themselves.
