For full functionality, multifunction printers that include a document scanner and other non-printing features require installation of a manufacturer-supplier companion App. AirPrint itself does not directly support scanning or Fax facilities offered by some printers.
In more detail, AirPrint is a driverless printing protocol - this being used to print from your iPad to the printer. By contrast, other functions of your other Printer (e.g. the scanner) cannot be directly accessed by your iPad - as these functions would require installation of appropriate device-driver software on the iPad (as would also be the case when using other computers with which you may be familiar, such as an Apple Mac or Windows PC).
iOS/iPadOS does not provide any method by which device-driver software other than by installing a companion App provided by the device manufacturer.
