I currently have an old Mac running Catalina, version 10.7.5 and am getting a new iMac today. Should I use migration assistant or hook the two computers together with an ethernet cable?

Just follow the instructions in Setup Assistant and Migration Assistant and your migration will be quick, simple and dead reliable.
Migration Assistant will use Ethernet if that connection is viable.
FWIW, I've always used Migration Assistant with a current Time Machine drive.
