Sorry to say our stuff is gone.

The 2020 MBP runs from an SSD. It's nearly impossible to get data back from anSSD once it's been deleted. SSDs aren't HDDs that have lingering data.

I recommend you start using the Time Machine backup solution that is included in the Applications folder of your Mac so this doesn't happen to you again. Back up your Mac with Time Machine - Apple Support

When you delete items stored on an ssd drive, within less than a second, they are completely gone, and the blocks are collected into superBlocks and bulk-erased.

There is a great deal of information on the internet that suggest when you delete stuff off your drive, it can be salvaged with special software. That applies to Rotating Magnetic drives ONLY, and NOT to SSD drives, so most of that information is stale.

All of the 13" Intel-based MacBook Pros released in 2020 have an Apple T2 Security Chip.

This implies that most, or all, of the contents of the SSD have been encrypted in real-time with keys held within the T2 chip. If you separate the flash memory chips containing your data from the decryption keys – good luck making heads or tails out of that data. Oh, and by the way, those chips are soldered in.

So I'd be wary of any "data recovery service" that claims they can pull the drive out and recover data from it.

Trobuleshooting Lost Data:

Loss of data is something you would have agreed to upon opening an Apple Account. If you cannot regain hand to data, then it is gone, if not backed up. That’s just the way it is :(So, look in a place would would have backed it up. Elsewise, it is gone. For example, here is how you would troubleshoot Photos and Videos:

Locating Lost Photos and Videos:

I. Enable Photos and Contacts in iCloud:

On the iPhones, enable Contacts in iCloud.

On the iPhone:

  1. Go to: Settings
  2. Tap: Your Name (Top Item)
  3. Tap: iCloud
  4. Tap: Photos (so that it is green)
  5. Tap: Contacts (so that it is green)

II. Troubleshooting Deleted Photos:

Three Things to Try:

A. Start here: If you're Missing Photos or Videos in the Photos App - Apple Support

B. Check iCloud, Directly:

Go here, and see if they reside in iCloudhttps://www.icloud.com/photos

C. Where Else to Check:

  1. PC
  2. PDA
  3. eMail
  4. Mac Device
  5. Cloud Storage
  6. Android Phone
  7. USB Flash Drive
  8. External Hard drive
  9. Secure Digital Card
  10. Compact Flash Card
