Is there a way to change the order albums are stored/presented? For example, when I choose artists, the artists appear in alphabetical order, which is good, but under each artist the albums also appear in alphabetical order: I would like to change that to my own preferance (eg order they were issued)

Try View > Sort By > Artist in the first block, and then View > Sort By > Year in the second block.

iTunes/Music will sort albums released in the same year alphabetically. You can potentially use the Sort Album property to force a different order when sorting by Artist/Year, however this may then give confusing results when using different views or sort orders.

Thank you, this is what I was looking for. However date isn’t always perfect because albums get remastered. Is it possible to customize to your own favourite order? I will look myself later but if you already know if it is possible that would be very helpful.
