I bought an I phone 16 pro max directly from Apple. The phone was stolen in December. My insurance company is requesting proof of barring using the IMEI Number. How do I organize this via Apple

The IMEI number is on the box that the iPhone came in. Your carrier will have a record of the IMEI as well.
You would contact your carrier to report that the phone was stolen and ask the carrier to "blacklist" the phone. They will send confirmation to you, so you can forward this to the insurance company.
Since you bought it directly from Apple, sign into your apple id and click on store. Scroll to the bottom and click on "order status". IN the upper right hand corner, click on "view invoice".

I'm sorry, after clicking "order status", click the device in question and THEN click "view invoice". I left out a step.
