How can I disable automatic call recording on iPhone SE?

Your iPhone is not automatically recording your calls, you would have to manually do so. Neither can it record your message conversations. What makes you think that?

The call recording setting may be on by default, but you still have to manually press the record button on a call. It will not automatically do so whenever you are on a call.
