Iphone 11 what file encode type should my phone be set as i?

Iphone 11 what file encode type should my phone be set as in files? and does itchange in places line icloud? or any other places? Why are my documents in a messed up coding when I save them even though viewing them they were fine before? I'm not a computer programmer I don't understand coding in symbols upside down and numbers along with other various characters and letters what the heck is up with this? Under documents or Google documents and files as well as pages, sheets, excel, PowerPoint and others
