When Apple introduced the iPhone 7 in September 2016, it ran iOS 10. It has gotten five major iOS updates since then – but iOS 15 is the end of the line.

You can update an iPhone 7 to the latest release of iOS 15 – currently iOS 15.8.3.

You cannot update an iPhone 7 to iOS 16 or higher. If you need or want to run something more recent than iOS 15, it is time to buy a newer iPhone, preferably one compatible with iOS 18.

You cannot pick and choose an iOS version. What you get is Settings > General > Software update > [All options are available here]
