was the same with iPhone14 and iPhone13 and iPhone12 and iPhone11.
it’s clearly got something to do with my Apple ID as my wife could always update using same WiFi across multiple devices.
its got nothing to do with needing a reset, waiting, WiFi connection, same problem across multiple devices for years, I can only update using iTunes

Do you have a 3rd party VPN installed, even if you are not using it? If so, delete the VPN profile in Settings/General/VPN & Device Management/VPN. Don't just turn it off; delete the profile. If that fixes it, you can try reinstalling VPN. However, VPN actually reduces your privacy, it does not enhance it.

Sure, I bought an iPhone 10 entered my Apple ID automatic updates were turned on
unable to check for update during its entire lifetime, wife’s iPhone 10 with her Apple ID could update fine.
Then..
I bought an iPhone 11 entered my Apple ID automatic updates were turned on
unable to check for update, wife’s iPhone 11 with her Apple ID could update fine.
then…
I bought an iPhone 12 entered my Apple ID automatic updates were turned on

Could you please explain what you mean? It doesn’t make much sense to me.
You haven't actually explained what's wrong.
What happens when you attempt to update? If you get an error message, what does it say?
