Sometimes, when I’ve charged my battery to 100%, and I turn it on the next day (off charge) it says I’ve got no charge and shows the red battery icon, but as soon as I plug it back in, it says 100% charge again.

It is just one of the many odd behaviors of Apple USB-C laptops. I see this a lot with the Intel Macs even when a brand new Apple OEM battery is used which tells me it is a hardware/firmware issue with the Logic Boards on those systems. I haven't worked on enough of the M-series Macs to know if they also suffer from this problem....I haven't noticed it yet.
If this is an Intel Mac, then try an SMC Reset.....make sure to read the instructions even if you know how to do this since later Intel Macs have slightly changed the procedure:
