I can't use Apple Pay anymore because it tells me (at the bottom of the screen) to 'update shipping contact'... I have tried changing my billing address in settings but with no success ( there is no shipping contact field that I could find). It really seems like a weird request...

Check the three locations below,
Each card also has an address associated with the account. Please follow this path;
iPhone > Settings > Apple Account (Your Name at top of screen) > Payment & Shipping > tap card to edit > tap Billing address > tap edit (upper right corner of screen) edit necessary changes
iPhone > Settings > Apple Account (Your Name at top of screen) > Payment & Shipping > Shipping Address (edit or delete address
iPhone > Settings > Wallet & Apple Pay > Transaction Defaults (scroll down) > Shipping Address > Edit (upper right corner of screen) > either Enter New Shipping Address, add new address or edit/delete addresses
In addition, if your using Safari browser it could be the cached data used for Autofill.
Lastly, the Me Ccontact card in the Apple Contacts app must have the correct address in the first address slot.

Starbucks app does have a personal information section that asks for your address. Take a look there.
Have you checked with the support team at Starbucks? Maybe the notification is from the app and the bank has an address that doesn’t match.
I have changed my billing address by following those procedures. I have tried many variations of my address (e.g. St instead of Street / capitalized my city/ etc) no success
What is shipping contact anyway...?
Is it supposed to be 'shipping address' / is it the same as 'billing address' ? In my case they are identical.
Maybe this is a Starbucks app problem...
