How can I minimize windows on my new MacBook Pro?

On my older MacBooks I was able to double click on a window's title bar and it would minimize and sit in my dock until I needed it again. With new MacBook Pro I cannot figure out how to set it up that way. I've searched online but the directions I found that say System Preferences > Dock & Menu Bar > Change "Double-click" a window's title to bar to" minimize no longer seems to be offered on new Macbooks or in Sequoia. Any advice?
