Co host feature on Apple Invites

I agree that it would be nice to add a proper co-host. However, you are able to give your guests permission to invite others. If you open the Guest List, you can press the three dots to the right of guest and in the menu that opens select the option to allow to invite.

While there isn’t a co-host option, you can change the name of the host and make it say “Jane & John Smith”
