How can I stop shared text messages on iPhone without the other person's phone?
My mom’s text messages also go to my stepdad but she doesn’t want this. How do I correct this without his phone?

Y’all are sharing an Apple Account.
That sharing is not recommended, and a whole lot more than just the chat logs is shared.
Create a new Apple Account, and migrate the device and its contents to the new Apple Account.
