What sort of adapter do I need to be able to plug my older accessories in to my 2024 imac

One option: USB-C to USB Adapter - Apple

There are also 3rd party options such as https://www.amazon.com/Syntech-Adapter-Thunderbolt-Compatible-MacBook/dp/B07CVX3516/?th=1

Another option would be to an internet search for USB-C hubs which allow connection of multiple accessories to the hub using one USB-C port.
