How do I remove an unexpected 11.99 charge from my Apple Account?
What is this charge for? I have not purchased any extra products that justify the charge. Please, take the charge off my account

Purchases managed by Apple can only be made on your device when you double click the side button with the amount showing on the screen, followed by verification with Face ID/Passcode. That is not something that can be done by accident, but anyone that you share your Passcode with is authorized to use your device and that includes purchases.
If you are the Organizer of a family plan that uses Purchase Sharing, then you have authorized members of that plan to bill your payment method for purchases. If you signed up for a free trial and did not cancel that trial at least 24 hours before it ends, then you will now have a subscription. That is shown clearly on the screen before you double click the side button.
