If you didn’t sync to iCloud, didn’t back up to iCloud, and didn’t back up to your computer there is on way to get content then there is no way to recover anything from the iPhone.
Your contacts, notes, reminders and calendar events sync to email servers, so that can be recovered by logging in to your mail accounts, but other than this nothing is recoverable.
As has been answered above by Lawrence Finch, if you don't have a backup of the data on your phone on iCloud or on a computer, then you don't have a way to get your data. It is already gone.

The answer is "no". That is why it is so important to make regular backups of the data on your phone.

You seem to think that the SIM card is where the iPhone stores your data. It isn’t. The SIM card just has a little bit of information needed for you to connect to your carrier’s cellular service. All of the other data on your iPhone is stored on a chip or chips that are part of the iPhone.
Moving the SIM card to another phone did not transfer your data because your data was never on that card.
