How can I transfer iPhone data using a Mac?

My wife needs to transfer all data from her old iPhone to a new one. I have a fast Mac and I thought using local backup and restore to do this (with the Finder) , as it must be faster than all other methods. Can I do this even if I use my login and my appleID, which is not hers ? thanks

Yes.

You can backup the old iPhone to the Mac and then use that backup to setup the new iPhone. The logged in account on the Mac is not relevant.

click here ➜ Back up iPhone - Apple Support

then here ➜ Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

Make sure You don't sync the iPhone once the restore is complete though so it does not get your data and music from Finder.
