How do I enable voice-to-text on iPhone instead of Apple Watch?

ok so I set up my apple watch yesterday with my 16 promax. Now, I am only able to speak to text on my watch and I want to be able to do it on my phone instead or both would be even better. I can push the microphone on my phone but it does not record anything I say and I have to keep going to my watch to talk to text unless I want to type all of my messages on my phone and this is a serious pain in the butt
