How is it that apple can keep bringing out phones but can’t find out a way to back up your data on iCloud remotely. I can apparently erase the data on find my but not back it up in what universe does that make sense I know I should’ve backed it up but it didn’t occur to me that my phone would be stolen I’ve even updated the storage amounts for iCloud but apple ‘can’t’ help…

There is no remote data retrieval mechanism. Nor will most thieves allow communications with a stolen device.
Backups have to happen before the loss, damage, ding, dunk, drop, fire…
You can check for an existing backup in iCloud.
You can also check for photos in iCloud, if iCloud Photos was enabled.
Log into iCloud.com to check both.
(If there are no backups found in iCloud, it is entirely unlikely the thieves will enable backups.)

Your phone will backup when connected to power and locked. If your device is missing, it cannot be backed up.
