Finder does not see the new update from ios 17 to ios 18 for my iphone 13 pro.
It says the current update is the latest update.

Just updated everything via DFU mode.
I think it was connected to a bad Apple server last time.

Have you restarted your Mac? Restarted the phone?
If you connect the phone to the Mac using a cable, and you click on Back Up Now, does the backup run?
Are there other troubleshooting steps have you performed so far on the Mac?

Finder is flawless on two iPhones here. The update takes maybe 4-5 minutes to download and another 10 to install.
Sounds like an issue with your Mac, so I would have it checked at the Genius Bar or an authorized Apple service shop in your area:
I rebooted my phone and my mac.
The backup is running.
I sent my iPhone to recovery mode and in that case my mac sees the new update and starts downloading it. But the download is very very slow, the download time is 8 hours.
After leaving the recovery mode my mac again does not see the update.

Let's wait and see what the OP reports after some basic checks. Updating via the Finder has always been flawless for me.
