I have a glucose monitor that works with my phone, but the app on the phone has only been cleared with iOS 18. How do I update my phone to 18, if 18.3 is already out?

The first generation iPhone SE models:
A1662, A1723, and A1724
can run no higher iOS version than iOS 15 due to hardware constraints. Second and Third gen iPhone SEs can run iOS 18.
To find your model, tap Settings > General > About. Then:

Developers, not Apple, decide on what Apple devices their apps will run. If you have a gen1 SE, contact the app developer to see if they have a solution for you.

You can't pick and choose. Any update that you run will always install the most recent version of the iOS.
So, you'll need to get the all clear from the glucose monitor folks before you run any updates. Unfortunately, most companies don't react all that quickly, so by the time that the glucose folks say it's OK to run iOS 18.3.1, the current update will have likely shifted to something like iOS 18.4 or iOS 18.5.
Apple no longer signs that version. Wait until it's approved for 18.3, or update to it anyway, or leave the unit on its current one.

Forget to add: If you have an iPhone SE 2nd or 3rd Gen, simply do Settings > General > Software Update
They advise not upgrading beyond 18.0.1 because the app has not been approved for that upgrade. I have a 2nd gen SE, so it should be OK for 18, but I don't find anywhere to upgrade to 18--they all go straight to 18.3.
