I accidentally deleted on my iPad and iPhone the custom face emojies you can make or personalize. Now I just see the different animals and stuff. I don’t see the different faces anymore. I thought I deleted the face I was trying to create.

Sounds like you are referring to Memojis. Once deleted they cannot be recovered, meaning you’ll have to recreate them.
To create a new one, open Messages > Tap
the + on the left above the keyboard > Scroll down to tap Memoji > Swipe right to tap the + > Have fun and create a Memoji!

I'm sorry to hear about your deleted Memoji.
Unfortunately, once a Memoji is deleted, it cannot be recovered.
However, you can create a new Memoji by opening Messages, tapping the Memoji icon, and selecting 'New Memoji' to customize your new avatar. ⇣

I don't think you can delete the Memoji features such as skin, hairstyle etc.
