I would highly recommend a MacBook Pro. It is often true that a MacBook can do anything an iPad can (a few exceptions), but the opposite isn't true. I've owned way too many iPads and have had a MacBook Air and now a Pro. This is what I see based on your objectives:
- YouTube = video editing, recording software, and graphic design
- Website creation and online store = coding and graphic design (depending on approach)
Someone in my family is starting a YouTube channel and uses Figma for creating thumbnails, iMovie for editing videos, and may start using recording software so that an external mic and an iPhone can be plugged in to the source computer. Basically, you want to have many ports and great software support.
If we're comparing Apples to Apples (definitely pun intended), this is the U.S. price you'll be looking at for each device in a reasonable configuration with adequate storage:
- iPad Pro 13" M4 512GB storage 8GB memory + Magic Keyboard -> $1,848.00 (plus taxes)
- MacBook Air M3 13" 512GB storage 16GB memory -> $1,299.00 (plus taxes)
- MacBook Pro M4 14" 512GB storage 16GB memory-> $1,599.00 (plus taxes)
- MacBook Pro M4 Pro 14" 512GB storage 24GB memory -> $1,999.00 (plus taxes)
Notice how the iPad pro would cost just about as much as the MacBook Pro M4 Pro if we added an Apple Pencil! I would recommend the MacBook Pro M4 out of all of the options (I have an M3 MBP from last year); it has more ports than a MacBook Air and a better display for video editing. If you can afford it, a MacBook Pro M4 Pro would be an absolute beast at video editing which is very resource intensive, but that power may not be needed depending on how long your videos are and at what quality they are exported.

P.S. It is true that some people may purchase an iPad to act as their iPad and computer. In this case, the pricing disparity I mentioned may be irrelevant since in other cases people own both an iPad and a MacBook, adding up to a greater price than just a single powerful device (iPad Pro M4). The decision is yours. Just remember your priorities.
