Are you looking at the file creation date in the Finder?
When you export photos from the Photos.app using an older version of macOS, the file creation date will be the date of export, for example "today". But you can still see the date the photo has been taken in the EXIF tags of the photo, for example when you view the photo in Preview with the Inspector.
If you can upgrade your to macOS 15 Sequoia, the file creation date for photos will now be capture date set by the camera or set by Photos, if you changed the date in Photos. However, this will not work for scanned photos, where you have set the date to a day before 1970. Then the file creation day will be 1970 for all these photos.
