I am unable to delete the email address in my apple account and add my new secure email. I have been hacked and hacker has access to the email YOU HAVE LISTED in my account. I NEED IT DELETED!

Could you explain what you believe has happened here, as your posting is confusing?
It is fundamentally impossible to hack an email address. That’s just not how an email address works. Accounts can be hacked certainly, and variously are. But not email addresses.
Addresses can be collected and used by spammers and scammers too, but that’s also inevitably going to happen with any replacement email addresses.
And yes, email addresses can be caught in various breaches, but that has no effects on the account. Unless you are reusing passwords, and that re-use would be bad, and that password re-use often becomes a mess. The fix for thst is to not re-use passwords.
This is a user-to-user forum. We’re other users, not Apple, and nobody here has access to your Apple Account.

You didn't receive an email claiming that the hacker has control of your email and sent it from your account did you?
That is typical of the Hey Pervert scam where they also claim to have private photos of you and information about your activity and spoof the email address to scare you into believing they have access.
