Airplay Icon on Display:

Add it as Screen Mirroring in the Control Center.

1. Go to: Settings
2. Tap: Control Center
3. Select: "Always Show in Menu Bar" for "Screen Mirroring"

AirPlay Icon on the Desktop:

There is no AirPlay icon for the Desktop. Stream something, and you'll see it in the Control Center, as highlighted on the top-left corner of this screenshot:
