When looking in your Bluetooth Settings, you will see a list of devices that are in range that you can possibly connect to and those will appear in the Other Devices section. You are not connected to those devices. The devices you have connected to previously will appear in the My Devices section and will show if they are currently connected or not.

It is your device that connects to them, they cannot remotely connect to your iPhone. When you have previously allowed a connection to a bluetooth device on your phone, it will remember and automatically connect to that device when it comes within range. As Zachyy instructed, you can go in and forget the Device, and it will no longer connect, but you will still see it in the Other Devices section, when it comes into range. You are not connected to any device you see in the Other Devices section.
