How can I use my one Apple Watch for sleep tracking?

I have two watches, and I use one of them to track sleep. For a long time this worked perfectly, but now the watch app turns on sleep tracking for both watches when I try to turn it on for the one I want to use only. Then that "wrong" watch starts ringing alarms at the wrong time of the morning.

How can I go back to just using ONE watch for sleep? I have tried a full reset of the watch.

OK--resolved. And I have to confess my own embarrassment.

When attempting to resolve this, I was attempting to turn off sleep tracking for a specific watch using iPhone\watch\[watchName]\Sleep\Track Sleep with Apple Watch toggle. That is not how you turn off sleep tracking for a specific watch. On the screen--lower down, so you have to scroll--is Don't Use This Watch for Sleep.

Clearly, that is what you told me to use back on March 3.

Now in a weak attempt to defend myself, it's not clear to me what the first toggle does that's different than the second option. But I don't care that much, it's working again. Thanks for your help, Ingo2711.

Here's an example of the problem:

last night I realized I didn't need to wake up as early as normal, so I changed my wake-up time (next wake-up only) to my new wake-up time. I was wearing the watch I want to use for sleep tracking at the time. This morning, my OTHER watch alarm went off at the NORMAL time, waking me up early--and the night-time watch alarm went off at the scheduled time.
