The calories on my Apple Watch are vastly different to the total calories showing on the fitness App. I have disconnected Oura as thought this may be the issue but this has not fixed it. Has anyone had this issue?

Can you give us more details?
Did you open the Health App on your iPhone and check in Browse -> Active Energy -> Show All Data -> which devices record calories?
Also check under Data Sources & Access, if any apps or other devices add to that count.
If you tap on the Move ring on your watch, is the graph shown similar to the one in the Fitness App?
Are you seeing the same numbers during the day, if you check your watch and Fitness App on the iPhone?

For example, yesterday, the red number on my watch said 2930 but the total under Move in the fitness app says 2240. See pic.
Yes and no. The stand and exercise appear to be the same but the red one on my phone is move and very different to what is on my watch.
