How to verify legitimacy of a suspicious Apple email?

My recent run in with "those" emails have led me to believe that if the email is asking for money(call Apple billing to verify) or info(check your Apple account), you avoid it like it's an STD, lol, regardless of the email address. The scammers want your money more than Apple and you know that must be a lot of want, lol.
